I am so excited to kick off my Nutrition: Food & Culture Series. I’m starting with A Talk with the Elders feature. I talked with one of my beloved elders to see how food in America has changed in his lifetime.
Potatoes are mineral and vitamin rich. They are easily incorporated into meals of varying dietary preferences such as gluten free and Low-FODMAP diets making them quite versatile.
As with many foods, the nutritional content is affected by the process in which a food is prepared. This is no different for potatoes. To reap the benefits of potatoes nutritional value, try baking, boiling, steaming, and simmering/moist cooking when preparing them.
A dish with potatoes in it is not necessarily unhealthy; it mainly depends on how the dish is prepared. Potatoes are a valuable addition to a well-balanced diet. In short, eat unprocessed potatoes with the skin intact.
